I went to a Maximized Living Seminar yesterday and I have put forth a conscious effort to change my eating these past 2 days. I have been doing the WW plan modified with recipes from the Maximized Living Plan. The scale showed a 3.1 pound loss since yesterday! I weigh in on Tuesday, and I KNOW that I will have a great weight loss!
Last night, I made coconut chicken tenders. They were amazing! Ang, Mark, and my parents tried them and liked them. Mark was completely in love with them.
Recipe:
Coconut Chicken Tenders
Ingredients: 3-4 boneless, skinless chicken breasts
2 eggs
2 cups of coconut
1/2 cup of coconut oil
1. Melt coconut oil at medium heat, be sure not to scorch.
2. Dip chicken into beaten eggs, then roll in coconut.
3. Cook in coconut oil until done.
Easy and delicious! High in points on Weight Watchers (16 for 1/4 of the recipe), but this would be if you use ALL of the coconut oil. I found that I had some left after frying and lots of coconut left, which absorbed some of the oil. I counted all of the points anyways. Ang is making them right now for Nick and her.
I have used 11.5 points today thus far. Here is what I have had:
Breakfast: 4 slices turkey bacon (2 points), 2 eggs (scrambled, 4 points), skim milk (2 points)
Lunch: 2 tablespoons guacamole (1 point), 1 cup celery (o points), 1T almond butter (2.5 points). I didn't eat them together. I ate all the almond butter then finished my celery with guacamole.
Normally, I would eat more, but I'm going to Mark's dad's house for dinner, so I wanted to save 10 points for that. I don't know what we're having, but I'm going to be reasonable about my choices. I'm not hungry right now at all, so I don't feel deprived saving those points for later.
I'm OBSESSED with Zumba, officially. There's a class at 8:30 in the morning tomorrow, but it's not with the amazing teacher on Thursday nights. I may try it, undecided though! I have boot camp tomorrow night. I'm noticing a difference especially in my arms and thighs from this class. I actually am able to lift heavier weights, too!
Overall, I am still extremely motivated. Watching the scale go down in great, but seeing my body change is amazing. I'm now exactly 2 months into my journey, and I am ready to conquer this.
How was eating at my Dad's? Yikes! Butter on everything!
